As the line goes in Baz Luhrmann’s Everybody’s Free to Wear Sunscreen Song: “Live in New York City once but leave before it makes you hard”. And so I lived in the Big Apple once. I was there for 5 years, and moved back to Scotland in September 2015.
Towards the end of my stay in New York I ended up living for a few months with a really lovely lady who was a healing therapist and also an actress. She was into healthy living and eating. I really liked living there, as there was just a really pleasant energy in her place. I remember noticing big tubs of coconut everywhere, and she touted the virtues of this exotic Superfood. So I thought I’d give it a try and I researched all the different ways it could be used. By the end of that summer I was using coconut for just about everything! I used it as a hair mask to moisturise my hair, also to help with hair growth, moisturiser and light sunscreen for my face, mouthwash (oil-pulling), teeth whitener, body moisturiser, eye-make remover (trust me, it’s much more effective than the eye makeup remover you get in the shops). I was also drinking coconut water and using it for cooking. As you can imagine, I had coconut coming out my ears!
When I came back home my mum noticed a difference in my skin and hair. She exclaimed “What did you do? How come your hair and skin look so good?!!!!” I told her about all the coconut I’d been using. My mum is now a dedicated follower of coconut and now buys tubs full of the stuff! She too uses it religiously for everything. We love coconut! It’s just so good for you.
As I was in the planning stage of launching My Jam, my mum suggested that I use it in the jam. I have to admit, I kind of thought we were now going overboard with our coconut fanaticism and dismissed the idea at first. My mum persisted however, mentioning the lush creaminess and great taste of coconut. So I thought, well we use it in everything else so why not in a fruit spread too? And so coconut made the grade and found its way into the blueberry flavour. What I ended up doing was replacing the flaxseed (which was the original ingredient) with the coconut instead. And to top it off I threw in some chilli. From there, Hot Blue Jamboree was born!
Superfood Benefits of Coconut
Many benefits have been discovered of this this wondrous fibrous fruit. It contains high levels of potassium, vitamin c and magnesium.
